This microlot was selectively chosen by Orlando Aguilar amongst the strong specialty varietals he works with on his Buena Vista farm. Coming from a coffee producing family, Orlando’s farm is placed perfectly in the Chalatenango region of El Salvador for an ideal climate and fertile soil. Once this coffee was harvested, it was left to ferment in sacks for 9-12 hours before being de-pulped and washed. Finally, it was dried on raised beds for 10-13 days.
There is beautiful complexity in the cup with a tangy, fruity acidity balanced by a sweet and sticky caramel body. Best enjoyed once it has cooled down a little bit.
